High-fructose corn syrup (HFCS), commonly known as glucose-fructose, is a sweetener derived from maize starch that has had some of its glucose converted into fructose by the enzyme glucose isomerase. The sweetener is commonly used in the food sector as a substitute for sucrose. Domestic sugar production limitations, import tariffs on foreign sugar, and corn subsidies in the United States are some of the causes driving up demand for HFCS. Furthermore, an increase in the price of sucrose in comparison to HFCS leads to the high use of HFCS. HFCS is most typically found in soft beverages and is the main ingredient in the majority of commercial pancake syrups.

Furthermore, excessive use of added sugar in any form, including high fructose corn syrup, can have a number of detrimental impacts on human health, including obesity, which is another important factor contributing to the high fructose corn syrup industry downturn.
