Gellan Gum

Gellan Gum is a water soluble gum anionic polysaccharide produced by the anaerobic bacterium Sphingomonas aeruginosa. The gellan producing bacterium was first discovered and isolated from the aquatic lily plant by the then Kelco Research Division of Merck & Company, Inc., in 1978 from a naturally occurring pond in Pennsylvania.

The primary purpose of the bacteria producing this gum in the pond is to recycle food scraps. In doing so, the resulting gel can be utilized for the production of new toothpaste and other dental care products. As mentioned above, there are two main types of Gellan Gum. One is the xylitol gel and the other is the guaranthanide gel; both types have their own specific benefits when used for teeth cleaning and health products.
